Abstract: This research aims to develop a facial mask product from silk and mulberry extract by freeze-drying method. First, integrates consumer's needs from the questionnaire and transforms them into technical design specifications by quality function deployment (QFD). The result shows that the high importance score from House of Quality (HoQ) phase 1 is the antioxidant activity, ability to release substances, and certification standard. Therefore, cytotoxicity was tested to confirm the initial product safety standards. Antioxidant activity and tensile test are also used as a specification for analysis in products. The mixture design technique from Design of Experiment (DOE) was used to find the suitable ratio of chitosan, fibroin, and mulberry leaf extract. As a result of the cytotoxicity test, it was found that cell viability was more than 100% in all formulas. Finally, the optimal ratio of chitosan, fibroin, mulberry extract is 0.3000: 0.2475: 0.4525. The resulting free radical inhibition is 34.15 %, and antioxidant activity is 36.64 Ug of ascorbic acid/ml. And, the result of tensile strength is 5.27 N/mm.
